We have worked with the Coto family from Guatemala for several years now and are excited to introduce you to this Natural Pacamara single origin from their farm El Platanillo in San Marcos. Fun fact: the name Pixquin comes from one of the popular trees that grows there. This sweet cup has a bright, tropical acidity, a soft, creamy body and a pleasant, lingering dark chocolate finish. These cherries were dried on raised beds for about 30-35 days. During the first 3 days, the cherries are moved 3 times every hour, then every half hour for 4 more days, and then once every hour for the remaining drying period (that's a lot of rotating!). El Platanillo selected the natural process for this lot for environmental reasons, as the usage of water can have a high environmental cost.
